Practice making your own plum wine, and make plum wine this season!

1、Plum wine exercise1
Ingredients: 1 kg of fresh green plums, 0.6 kg of yellow rock sugar, 1 kg of white wine, one container of raw powder (for washing plums).
Container: 4kg for 1.8kg plums, 2kg wine, 1kg yellow rock sugar, 10kg for 4kg plums, 4kg wine and 2.4kg yellow rock sugar.

Steps: Soak the fresh plums for six to eight hours. I had to use raw powder to get rid of the unclean stuff. I washed them myself for the whole afternoon. After using water, wipe the water dry, remove the plum stems, and remove any impurities on them.

Remember: you can’t wash the plums. If they are not clean, you can only wipe them off with a clean, damp towel. First place a layer of plums in the bottom of a glass container and then a layer of rock sugar. Most of the plum surface needs to be covered. Repeat the above steps, overlapping the layers of plums and icing sugar. Then pour in the white wine. Finally, after nine months of patience, put the lid on and shake a few times, and you will have light plum wine. According to my wheat recipe, you must steep it for more than two years. This plum wine is a unique product.

Storage: Seal with plastic wrap and keep in a cool place.
2、Plum wine method 2
Ingredients: 7 kg of ripe plums, 10 kg of honey, 5 kg of sugar, 5 kg of filtered water, 2 or 2 oysters or 40 g of calcium carbonate.
Operation: Gently rinse the plums once with water. Place on a bamboo sieve and leave to ripen in a cool, ventilated place for 8 days (about 3-4 days). Place in a clean kimchi jar with forged oysters in the bottom, followed by the plums, honey and filtered water. Add about 2-5 kg of sugar at room temperature for the first time and ferment for about 5-30 days. After 1 week of continuous fermentation, add 2 kg of sugar for the second time. After 2 weeks of fermentation, add 1 kg of sugar. Transfer to indoor temperature below 30℃, continue fermentation and aging for 3 months, then open the lid and bottle for drinking.
