1. Choose grapes – As the saying goes, delicious grapes do not make good wine, so you should choose red-skinned, tart grapes. Buying famous grapes to make wine is ideal, but there is no market for wine making grapes. Choose grapes that are ripe, plump and free of disease. The darker the grape skin, the better the wine.

2. Cleaning – Since pesticides can remain on the skins of grapes, it is important to clean the grapes. You can soak them in water for about 20 minutes and then rinse the whole bunch. During the cleaning process, you should pick out the bad grapes and throw them away. Also, don’t wash the grapes too badly because there is white powdered wild yeast on the surface of the grape skins, which plays a role in fermentation.

3、Dry – After washing the grapes, put them in a basket and let them dry well.

4. Stir – Pour the grapes into a bowl and crush them one by one with your hands, leaving the skins, seeds and pulp in the bowl. Then, stir the grapes in a ratio of six pounds of grapes to one pound of sugar, or a little more if you prefer sweeter grapes, and mix well. (Please note that the bottle should not be full, it will stop at the two-thirds mark)

5. Seal – After bottling the grapes, close the cap (as long as there is no dust, don’t close it too tightly) and put it in a warm place to wait for the grapes to ferment naturally. Put the fermentation jar with grapes in a cool and ventilated place and start fermentation in about 24 hours. After fermentation, use chopsticks to press the grapes that are floating on the surface every day. On the one hand, you can inject some air and on the other hand, you can ferment more evenly.

6. Winemaking and filtering – Due to the high summer temperatures, the wine can be made within 21 days. If the temperature is below 30°C, it will take a few days to make the wine. It is important to note that the longer the winemaking time, the more intense the wine will be. The longer the wine sits after winemaking, the more intense the flavor. After the wine has been made, the seeds, skins and fermented pulp should be filtered out, called the pomace. The tool for filtering the residue can be a leaking spoon or gauze, leaving only the wine behind. It is important to note that the tools used to filter the residue must be strictly cleaned and sterilized so as not to introduce bacteria into the wine.

7. Bottling – Through the above process, the fresh grapes are used to create a wine that is fruity in color, beautiful in aroma, and sweet and tart. If you don’t drink it right away, you can seal it up in a bottle. It is stored at 15-20°C for several months. During the storage process, the wine can age naturally and undergo esterification, synthesis and binding, making the wine more transparent, aromatic, full-bodied and stable.
