The best choice of base wine for homemade plum wine is clear fragrant white wine or rice fragrant white wine

Recently, some friends often ask me how to make plum wine. I am grateful to my friends in my circle of friends for sharing. I have also written down the prescription and some precautions for the benefit of more children who would like to try it.

Last year was the first time I tried it. I used different kinds of plums and wine. The taste is a very personal thing. Share my feelings.

2. Alcohol strength 30.5° and 42° for steeping. After steeping for a year, I drank it. 30.5° is sweet and sour with a relatively soft taste. 42° is a bit choking. It is said that the plum wine tastes better in the second and third years. This was a mistake. I drank it all before the second year.
The plums left over after drinking the plum wine have a lot of flesh and are more suitable for making dried plums. Baked in a low temperature oven at 110° for 3-4 hours. This test is delicious. It simply can not stop. Hahaha.

1 After the plums are selected, remove the bad fruit and soak them in salt water or water for about 2-4 hours, changing the water 2-3 times in between and rinsing with tap water for 30 minutes.

2. Drain the soaked plums, carefully remove the stalk with a toothpick and soak.

3. After cleaning the glass container, sterilize and dry it in a safe way. Before soaking the plums, you can buy a bottle of low-cost high alcohol for rinsing.

4. Add the plums first, then add the rock sugar and wine directly.
Store in a cool, airtight place.
If you are interested, you can observe the changes in the plums. Over time, the plum skin will begin to wrinkle and float to the top, and the color of the plum wine will gradually appear.

7 Label and date the wine. After six months or even more than a year of waiting, the plum wine will turn golden brown and ready to drink~

What is the secret of choosing plums? [Green, hard pulp]
When choosing, choose the green color and hard pulp. It is best to put only perfect plums.
If there are only small spots on the skin of the plum, it is not a problem. There are many black drizzles. If there are too many raindrops, they will also be considered as lightly wounded. A few spots can be made directly into wine. It does not matter.

How do I choose a plum wine? [25-45° sake can be used, preferably 30-40° sake]
It is said that plum wine can be made together with white wine, rum, brandy or sake. It is best to choose clear fragrant white wine or rice fragrant white wine. It is not recommended to choose strong fragrant white wine or Moutai type white wine because too strong white wine will cover the aroma of plum and will not reflect the unique flavor of plum.

The higher the temperature, the longer the storage time. What kind of sugar is suitable for making wine yellow rock sugar
Ratio: plum 1: wine 1: rock sugar 0.5. If you have a sweet tooth, you can choose 0.6. It is recommended that it not be too sweet. What kind of wine can I choose? [Usually choose a large mouth glass sealed vessel]

Choosing a large glass sealed container will prevent acid attack on the fruit and allow you to observe changes in the brewing process. Smaller containers can be sterilized by boiling. Larger containers can be cleaned, scalded and exposed to sunlight to remove moisture. Screw on the lid, shake the inside with a little high alcohol, and pour out to sterilize.
