The lychee mead is the best I’ve had from all my friends.

A friend I met in Dali told me that honey can be used to make mead. The speaker was careless, but the listener was intentional. After hearing this news, I started checking all kinds of information and confirmed that it could be done at home. Then I bought the tools and equipment I needed to make it.

That same month, I made my first mead at home using various honeys in reasonable proportions and adding them to spring water. The existing varieties of honey – Hundred Flower Honey, Kejo Honey, Acacia Honey, Lychee Honey, and Gojira Honey – were tried again.

After a month, the fermentation of the mead stopped. When I poured it back, I couldn’t help but taste the mead made from different honeys. It was really different.
The mead made from Acacia honey was very sweet and had a distinctive aroma.

The mead made from Hundred Flowers honey was bitter and not very tasty because there are many herbs in the mountains in spring.
Lychee honey is accepted by all those who have drunk it and found it to be very tasty. It tastes sweet and sour and has an alcohol content of about 13 degrees.
The only failure was the mead made from fivefold honey. I later learned that the reason for this is that the honey has a bactericidal effect and new yeast had to be added to make the mead. At the same time, the yeast added to the honey was killed by the pentaphyllum honey, which caused the failure of the mead making.

According to Dounion, mead is nearly 3000 years old and is one of the most expensive ingredients in any mead. In my opinion, there must be many reasons why it has not been passed down like grain wine. Just like traditional Chinese medicine, the herbs have changed from wild yams to now being cultivated while the prescriptions remain the same. The same prescriptions may not achieve the desired therapeutic effect. Mead Honey could not be promoted as a grain in ancient times. Beekeeping has been a niche industry since ancient times and is heavily influenced by the weather. It is impossible for bees to collect exactly the same amount of honey each year as they did the year before. In addition, recently, honey fraud has become very serious. It is very difficult to buy pure, unprocessed honey in the market. It is natural to make good mead without good ingredients.
