Eight Steps to Winemaking.
Prepare materials: grapes, rock sugar (3:1 ratio of grapes to rock sugar), glass jar (wash and dry the water for use)
1、Grape selection
If you want to make a delicious wine, you must choose the most suitable ingredients. It is best to choose fresh grapes that are just released in the summer, rather than buying grapes that are out of season, otherwise they will produce a poor taste. In general, purple-red, ripe grapes are the most suitable. Ordinary giant grapes, raisins and horse milk are all fine.

2. Clean the grapes
The second step is to clean the grapes, which is also particularly important in the wine production method. Since pesticides and other harmful substances can remain on the skin of the grapes, soak them in lightly salted water for about 10 minutes and then rinse them with running water.

3. Dried grapes
Place the grapes in a leaky container and allow them to dry naturally to prevent moisture from being carried on the skins, which could affect the flavor of the wine.

4. Choose a container
Usually, choose a clear, wide-mouth glass jar to observe the fermentation. Never use plastic containers, as they may react chemically with the ingredients in the alcohol, releasing substances that are not good for human health.

5. Place in containers
Wait for the grapes to dry naturally, wash your hands, put on gloves, and crush the grapes one by one in a clean container (be careful not to use iron, especially for rusty wines), then put one layer of grapes and one layer of icing sugar into the glass jar, and so on, and then seal the jar for fermentation. (You can put a black plastic bag outside the glass jar for a better color of the wine later on.)

Note: In this step, be careful not to fill the jars too full, and leave one-third of the space in the jars. This is because the grapes will expand and produce a lot of gas during the fermentation process. If the jars are too full, the grape juice will overflow and even break the glass jars.

6、Ferment for half a month
The fermentation time is very short, about one week, because the temperature is very high in summer. If you want to have a stronger flavor, you can also choose to ferment for about ten days. In the fall, when the temperature is lower, you need to ferment for about half a month.

7. Strain and drink
After the fermentation is finished, you can strain it and drink it. Be careful to separate the grape seeds, skins and fermented grape pulp. Usually use a strainer. Before use, take care to sterilize the filter to avoid introducing bacteria into the wine. After filtering, you can drink it directly! (There may be a small amount of residue left after the first filter. Allow a few days of sedimentation before the second filtration).

8. Bottling and Storage
The wine should be stored in bottles, sealed in a cool, dry place, and ready to drink.
