A good plum wine combines the sweetness and fruitiness of plums with the richness of white wine

Speaking of acid, I thought of a seasonal fruit – plum. In the south, plums ripen in May and June every year. Plums contain a variety of natural high-quality organic acids and rich minerals. It has unique nutritional functions such as eliminating fatigue and regulating acid-base balance. However, the fresh fruit of plum is sour and unpleasant. Generally speaking, it cannot be eaten directly and needs to be processed. The most famous one is plum wine. The washed plums are soaked in white wine, and the ratio of plum, wine and rock sugar is adjusted to make a mellow plum wine after a month or so. Over time, it has become an important custom to drink plum wine during the cob planting season.

Every year in early summer, I make a few jars to seal the wine. Watching her change from green to an attractive amber color gets better with time while I wait. A good plum wine combines the sweet, soft fruitiness of fruit wine with the richness of white wine. The fusion of these two customs makes for a particularly intoxicating experience. Plum wine is also effective in regulating the body’s acid-base balance and maintaining human health. 【Materials】: 500g plum, 500ml white wine, 250g yellow rock sugar, salt
[Method]: 1. When making plum wine, select plums carefully and choose some damaged plums to avoid deterioration. First, wash the plums, drain the water, then sprinkle 2 handfuls of salt on them and rub them gently with your hands, without rubbing the skin hard.
2、Wash the kneaded plums with running water, soak them for 15 minutes, pour them out after soaking, and rinse them with running water.

3、After the plum is washed, break the plum stem and put the plum in a ventilated place to dry. Be sure to dry the water, otherwise the water will easily spoil. It can also be dried in the sun. If you don’t want to wait, use kitchen paper to dry the plums. This is the fastest, but requires a little paper.

4. Prepare a glass jar without water or oil. The glass jar should be sterilized by boiling water or by putting it in a sterilizer, and then drying the jar without water. Pour some white wine and shake it to sterilize the jar. Then put a layer of plum and a layer of icing sugar in the glass jar until it is eight points full. I used two jars to fill a kilo of plums. Remember not to fill the jars with wine, but leave some space for the wine to ferment.
