What is the reason for the popularity of plum wine?
Plum wine is popular not only because of its delicious taste and ease of private brewing, but also because it is a healthy drink for many people who have developed a habit of drinking it. The nutritional components of plums (such as malic and bitter acids) are incorporated into the sake during the fermentation process, making plum wine a healthy drink and medicine for Japanese families. Drinking a little plum wine every day has the effect of eliminating fatigue and regulating the stomach and intestines. Constipation can also be treated by drinking plum wine to improve blood flow and absorption in the gastrointestinal tract.

Brewing method of plum wine.
Ingredients: Plums: 1000g, rock sugar: 200~500g (mixed according to your preference)
Roasted wine: 1800ml (you can also use brandy, sake, vodka or colorless clear wine with an alcoholic strength of more than 35%)
Container: sterile sealed glass bottle (4L)

Preparation steps
1 Wash the plums and set aside. Use hot water to sterilize the wine making containers. After drying, sterilize again with a 35°C solution.

2 Soak the washed plums in water overnight (about 6-8 hours) to remove the astringency.
Drain the water and wipe the plums with a dry cloth, otherwise the plums will become moldy. After drying, use a bamboo pole to remove the straw. The brewed wine will have a bitter taste.

4 Put the plums into a container. Put the plums three times in the order of plums → rock sugar → plums. Finally, slowly fill the bottle with shochu by the mouth. Be careful not to wash away the plums and sugar.

5 After sealing, place the bottle in a cool place and shake it a few times a month to distribute the sugar evenly.

After about 2-3 months, it becomes a delicious plum wine. Plums can be removed or steeped. As the brewing time increases, the plum wine becomes more mellow, even if it is kept for more than a year.
