How to make plum wine: use medium-ripe green plums, add rock sugar and 45 degrees wine

Plum wine is an infused wine in which plums are soaked in distilled spirits (usually rice wine) for a long period of time.

How to make plum wine
Method 1
Ingredients
Plums (medium-ripe), rock sugar or honey, malt powder, yellow wine or Pao Gu wine.
The ratio is 25-35 kg for 8-9 times ripe plum fruits in 45 degree yellow wine or white wine
22-25 kg of rock sugar and honey, and 4 taels of malt powder.

Directions
1、Wash the plums and dry them well.

2、Put the plums, rock sugar or honey into a sterilized earthen jar (followed by a glass jar), and then pour in 45 degree yellow wine or Pao Gu wine to seal.

3、After 4 months, you can open and drink it.

4、Add rock sugar and honey, then add malt powder.

5、After opening, use a shovel to seal the plastic products (not iron or copper and aluminum products, which will oxidize and affect the quality of wine), and then let it sink (about 36 hours).

Natural fermented plum wine
Ingredients
7 or 10 kg of ripe plums, 10 kg of plum honey, 5 kg of sugar, 5 kg of filtered water, 2 or 2 forged oysters or 40 g of calcium carbonate.

Activity
1. Gently rinse the plums once with water. Then install a bamboo sieve and leave it in a cool and ventilated place for 8 days (about 3-4 days)

2. Place in a clean kimchi jar with the forged oysters in the bottom, followed by the plums, honey and filtered water.

3. Ferment at room temperature around 30°C for 4-5 days, adding 2 kg of sugar for the first time.

4. After 1 week of continuous fermentation, add 2 kg of sugar for the second time.
After 2 weeks of fermentation, add 1 kg of sugar.

6、Transfer to a room below 30℃, continue fermentation and aging for 3 months, then open the lid and bottle to drink.
