Plum wine sounds mouth-watering, especially in the summer. According to Mei Shi-Zhen’s “The Compendium of Materia Medica”, plums are sweet and mild in flavor, and can enter the spleen, the liver, the lungs, and the large intestine, where they have an astringent effect and produce body fluid. Preparation: 2 kg of plums, 1 kg of rock sugar, 2.2 liters of rum (white wine or sake).
Method.
1. Pour the plums into a basin.
2. Wash the plums and soak them overnight to eliminate the astringent taste
3. Pour the soaked plums into a drainage basket and place them in a ventilated area. Let the water on the surface of the plums dry. If you don’t want to waste time, you can use kitchen paper towels to absorb the moisture from the plums.
4. Use a knife to cut the flesh from the heart of the plum.
5. Apply a layer of plum pulp to the bottom of the glass jar and sprinkle a layer of icing sugar on top of the pulp
6. Spread a layer of plum pulp on the icing sugar, then another layer of icing sugar, and so on. Repeat until the bottle is filled to nine.
Pour in the rum (white wine or sake), put the lid on the bottle, and move the glass bottle with the plum wine to a cool place.
The effects of plum wine.
