Fermentation and preparation of grape fruit wines: 3 details that must be noted

I. Fermentation method of grape fruit wine
1. Raw material selection
When choosing grapes, you can choose some ripe grapes or even scattered grapes. These grapes are easy to ferment and relatively inexpensive. Ordinary grapes, raisins and milk can be used to make wine.

2. Washing grapes
It is very important to clean the grapes as the pesticide may remain on the skin. It is best to wash them one by one and then rinse them repeatedly with tap water. At the same time, the rotten grapes are also removed. It is not impossible for some people who like to clean to peel the skins and make wine, but some of the unique nutrients in the skins are missing.

3. Dried grapes
Place the grapes in a leaky container and when the surface is free of water, pour them into the wine jar.

4. Choose the container
The wine jar can be a ceramic jar or a glass jar, but plastic containers are not recommended because they can react with alcohol and produce toxic substances that are harmful to human health.

5. Squeeze the grapes and put them into the container
After washing your hands, squeeze the grapes directly. To do this, grab a handful of grapes, hold them tightly and put them into the wine jar, then put sugar on top of the grapes. The ratio of grapes to sugar is 10:3, which means that you put 3 pounds of sugar on 10 pounds of grapes (if you don’t like sweetness, you can put 2 pounds of sugar, but you can’t do without it because sugar is an important factor in the fermentation of grapes).

6. Sealing
Seal the wine jars. If it is a ceramic jar, you can go to the store where you bought the yellow wine and order the clay, add water and put a seal on it. Once sealed, keep the wine bottle in a cool place. Do not open the lid during the day.

7. Unsealing
In hot weather, it takes about 20 days to a month for the grapes to ferment. In winter, when temperatures are cooler, it takes about 40 days after opening to make wine. Please note that if you like your wine strong enough, simply delay opening it. After opening, don’t forget to cover the bottle each time you spoon the wine to prevent it from evaporating.

8. Attention to details
1. You do not need to wash the grapes too much because the yeast needed for fermentation comes from the wild yeast on the grape skins. Excessive washing will greatly reduce the amount of yeast, which is not conducive to fermentation.

2、During the early stage of fermentation, do not cover the lid tightly because the yeast needs oxygen to reproduce at this time.

3. When fermentation is in full swing, the lid must be opened, because the fermentation process will produce fire, and sealing it too tightly will support the container. Use several layers of thin cloth to cover it.
