Finally, the fermentation takes more than six months, sometimes up to three years. During the production process, samples of red wine can be taken from time to time for inspection and sometimes for replenishment. Only when everything is up to standard can it be bottled.

Moreover, it is said that the most fragrant red wines are made from the feet of girls, and the fullest red wines are made from the feet of young women, because this method allows for better dissolution of tannins and some of the substances that optimize the taste of red wine, without breaking the seeds of the grapes. To this day, some of the finest red wines are still made using this ancient winemaking method.
