Wash the grapes and soak them in lightly salted water for two hours (to remove any rotten or fallen grapes) to remove pesticides and other harmful substances from the skins. Grapes with damaged skins should not be used for wine making because they are concerned that the salt water will penetrate the flesh during the soaking process, thus affecting the quality of the wine.

3. Press the dried grapes into containers. The fermentation process takes about a week (18-25°C), depending on the local temperature. In high temperature areas, fermentation can be completed in 2-3 days, when the grape skins are completely floating and no fire blisters are produced.

4. Stir and add sugar. After 24 hours of crushing, add the first sugar (5%-7% of the grape weight) and on the fourth day add 5%-7% of the second sugar. From the first addition of sugar to the end of fermentation on the seventh day, stir once a day in the morning and once a day in the afternoon, then stir the floating grape skins into the juice to make the fermentation complete.

5、When there is basically no visible bubbles in the bottle, you can prepare for filtering, usually about 8 days. Tie the gauze into a bag, slowly pour in the wine, wrap the remaining grape skins and seeds in the gauze, and squeeze the remaining juice into the wine.

6、The wine is a little cloudy at this point, so leave it sealed (about a week).

7、After a week, add egg white and stir (10 pounds of white wine, one part of egg white, stir the egg white hard for about 15 minutes to make it foamy) to make the wine clearer. After a period of resting, the wine will become clear and ready to drink.

Caution
In the summer, when there are a lot of grapes on the market for wine, be sure to buy naturally ripe grapes, not grapes grown in a greenhouse out of season. Buy purple ripe grapes (taste them, they are usually very sweet to ripen). Look at the base of the fruit. If it is green and tastes sour, it may be labeled “erythropoietin”.
