Steps.
1. Wash the grapes and soak them in lightly salted water for two hours (to remove the rotten ground and remove the grapes that have fallen off).

2. Rinse again with water and drain the water.

3. Press the dried grapes into a container. The fermentation process takes about a week (18-25°C), depending on the local temperature. In high temperature areas, fermentation can be completed in 2-3 days, when the grape skins are completely floating and no bubbles are formed.

4. Stir and add sugar, the first time add sugar (5%-7% of grape weight, the second time put 5%-7% on the fourth day) and crush it for 24 hours, from the first time add sugar to the end of fermentation on the seventh day, stir once a day in the morning and once a day in the evening, then stir the floating grape skins into the juice to make full fermentation.

5、When there is basically no visible bubbles in the bottle, you can prepare to strain it, usually about 8 days. Tie the gauze into a bag, slowly pour in the wine, wrap the remaining grape skins and seeds in the gauze, and squeeze the remaining juice into the wine.

6、The wine is a little cloudy at this point, so leave it sealed (about a week).

7、After a week, add egg whites and stir (10 pounds of white wine, one part of egg whites, stir the egg whites hard and make it foamy for about 15 minutes) to make the wine clearer. After sitting for a period of time, the wine will become clear and ready to drink.

Cautions.
1. Homemade red wine is pure in taste and does not contain any new additives or preservatives. It is clean and non-toxic. It is especially reassuring to drink.

2. When grapes are available in large quantities in summer, be sure to buy naturally ripe grapes, not grapes grown in the greenhouse out of season.

3. Soak in lightly salted water for about 10 minutes. Previously, some people said that if the grapes hurt the skin, they should not be used to make wine. That is, they were concerned that the salt water would penetrate the flesh during the soaking process, thus affecting the quality of the wine.

4. The third step is to pay attention to two points: 1. Seal the bottle with a wine thick gauze, and forbid sealing it. 2. When the grapes are bottled up to 2/3 of the way, they should not be filled too much, because the grapes will expand during the fermentation process and will produce a lot of gas. If the bottle is too full, the wine will overflow.

5. Be aware that the filtering tools must be strictly sterilized so that no bacteria are brought into the wine.
